  • 1 cup onion, diced
  • ½ cup celery, diced
  • A pinch of salt

  • Freshly ground black pepper, to taste
  • A pinch of cayenne pepper, to taste
  • 3 tbsp jasmine rice, uncooked
  • 1 tsp white sugar, adjust to taste
  • ½ cup heavy whipping cream
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp heavy whipping cream, for garnish
  • 2 tbsp fresh basil leaves, thinly sliced, for garnish

Directions

  1. In a large pot, heat olive oil over medium heat. Add onion and celery with a pinch of salt, cooking until the onion becomes translucent, about 5 to 8 minutes. Add garlic and cook for another minute until fragrant.
  2. Pour in the chicken broth and crushed tomatoes into the onion mixture. Bring the mixture to a simmer, seasoning it with paprika, black pepper, and cayenne pepper. Reduce heat to low.
  3. Stir in the jasmine rice. Skim off any foam that forms and simmer until the rice and vegetables are tender, about 35 to 45 minutes. Stir in sugar.
  4. Use an immersion blender to blend the soup in the pot until smooth.
  5. Whisk in ½ cup of heavy whipping cream. Season the soup with additional salt, black pepper, cayenne pepper, and sugar if needed. Adjust the consistency by adding more broth if it’s too thick or by cooking it down if it’s too thin, stirring frequently for about 10 minutes.
  6. Serve the soup in warmed bowls. Garnish each serving with a drizzle of cream and a sprinkle of chopped basil.
