Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup milk
2 tablespoons fresh lemon juice
1 tablespoon grated lemon zest
1 cup fresh or frozen blueberries
2 tablespoons all-purpose flour
Directions:
Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate large bowl, cream together the sugar and softened butter until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition.
Stir in the milk, lemon juice, and lemon zest until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just blended.
In a small bowl, toss the blueberries with 2 tablespoons of flour to coat them. Gently fold the coated blueberries into the batter.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 60 to 70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
