Instructions

Step 1: Cook the Chicken

In a large skillet, heat the olive oil over medium heat. Once hot, add the cubed chicken. Once fully cooked, remove the chicken from the skillet and set it aside.

Step 2: Sauté the Aromatics and Vegetables

Using the same skillet, add the chopped onion and minced garlic. Stir frequently and cook for about two minutes until fragrant. Add the diced red bell pepper and cook for another three minutes until the vegetables soften.

Step 3: Add the Pineapple

Step 4: Cook the Rice
