  • 1 cup heavy cream
  • ½ cup mascarpone cheese
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee or espresso, cooled
  • 2 tablespoons unsweetened cocoa powder, for dusting
  • 12 ladyfingers, broken in half
  • ¼ cup dark chocolate shavings (optional, for garnish)

 

  • ½ teaspoon cinnamon (optional, for extra flavor)

Instructions

Step 1: Prepare the Cream Mixture

In a mixing bowl, combine the heavy cream, mascarpone cheese, granulated sugar, and vanilla extract. Using a hand mixer or whisk, beat the mixture until soft peaks form. This should take about 3 to 4 minutes. The texture should be smooth, creamy, and hold its shape when lifted with a spoon. Set aside.

Step 2: Prepare the Coffee Dip

Brew a cup of strong coffee or espresso and allow it to cool to room temperature. If you prefer a sweeter tiramisu, stir in a teaspoon of sugar or honey while the coffee is still warm.

Step 3: Assemble the Layers

Take your mini cups or small serving glasses. Quickly dip a piece of ladyfinger into the coffee, ensuring it is soaked but not soggy. Place it at the bottom of the cup. Repeat with another piece to create the first layer.

Step 4: Add the Cream Layer

Spoon or pipe a layer of the mascarpone cream over the soaked ladyfingers. Spread it evenly with a spoon.

Step 5: Repeat the Layers

Add another layer of coffee-dipped ladyfingers, followed by another layer of mascarpone cream. Depending on the size of your cups, you may repeat this process once or twice.

Step 6: Finish with Cocoa Powder and Garnishes

Sift a light dusting of unsweetened cocoa powder over the top. For extra indulgence, sprinkle dark chocolate shavings and a pinch of cinnamon on top.

Step 7: Chill Before Serving

Cover the cups with plastic wrap and refrigerate for at least 4 hours, or ideally overnight. This allows the flavors to meld and the ladyfingers to soften, creating the perfect texture.

Notes

  • Do not over-soak the ladyfingers. A quick dip in the coffee is enough. Over-soaking will make them too mushy and cause the layers to collapse.
  • Whip the cream properly. Beating the mascarpone mixture until soft peaks form is crucial for a light and fluffy texture. Overwhipping can make it too thick, while underwhipping can make it runny.
  • Chilling is key. Allowing the tiramisu to rest in the fridge enhances the flavors and texture. If you are short on time, a minimum of 2 hours will work, but overnight is best.
  • Use high-quality cocoa powder and coffee. Since tiramisu has simple ingredients, the quality of each ingredient greatly impacts the final taste.
