Lemon Muffins:

  1. 1 ½ cups all-purpose flour
  2. ¼ teaspoon salt
  3. ½ teaspoon baking powder
  4. ¼ teaspoon baking soda
  5. 1/3 cup unsalted butter, softened
  6. ¾ cup granulated sugar
  7. 2 eggs
  8. 2 tablespoons lemon zest
  9. 1 teaspoon vanilla extract
  10. 1 teaspoon lemon extract
  11. 2/3 cup Greek yogurt
  12. 2 tablespoons lemon juice

Cream Cheese Filling:

  1. 8 oz. cream cheese, room temperature
  2. ¼ cup granulated sugar
  3. 1 teaspoon vanilla extract

Glaze:

  1. ¾ cup powdered sugar
  2. 1 ½ – 2 ½ teaspoons lemon juice

Instructions

  1. Preheat and Prepare: Start by heating your oven to 425°F (220°C). Get your 12-cup muffin tin ready by lining it with paper liners.
  2. Make the Streusel Topping: In a bowl, combine 1 cup flour, both sugars, and ¼ teaspoon salt. Pour in the melted butter and use a fork to mix until you get coarse crumbs. Put this aside for later.
  3. Combine Dry Ingredients: In a separate bowl, whisk together 1 ½ cups flour, baking soda, baking powder, and ¼ teaspoon salt. Set this mixture aside.
  4. Cream Butter and Sugar: Using a large bowl, beat the softened butter and ¾ cup sugar together on high speed for about 2 minutes.
  5. Add Eggs and Flavors: To the creamed butter and sugar, add the eggs, lemon zest, vanilla extract, and lemon extract. Continue mixing for another 2 minutes.
  6. Incorporate Yogurt and Lemon Juice: Gently mix in the Greek yogurt and lemon juice until just combined.
  7. Blend in Dry Ingredients: Slowly add the dry ingredients to the wet mix, keeping the mixer on a low speed, just until the mixture is evenly combined.
  8. Prepare Cream Cheese Filling: In a small bowl, blend together the cream cheese, ¼ cup sugar, and 1 teaspoon vanilla extract until smooth.
  9. Assemble the Muffins: Spoon a heaping tablespoon of the muffin mixture into each muffin cup. Place a tablespoon of the cream cheese mixture in the center of each. Then, cover the cream cheese with more muffin mixture, filling each cup to about 2/3 or ¾ full.
  10. Add Streusel Topping: Sprinkle the prepared streusel topping generously over each muffin.
  11. Bake: Place the muffin tin in the preheated oven. Immediately reduce the oven temperature to 350°F (175°C). Bake for 22-25 minutes, or until the muffins are golden brown and set in the center.
  12. Cool: Allow the muffins to cool in the pan for 5-10 minutes before transferring them to a wire rack to cool completely.
  13. Prepare and Apply Glaze: While the muffins are cooling, prepare the glaze by mixing powdered sugar with lemon juice to your preferred consistency. Drizzle this glaze over the cooled muffins.
