Just whipped up this Roasted Jalapeno Popper Grilled Cheese – the perfect blend of spicy and creamy! ????️????

  • Total Time: 25 minutes
  • Yield: 2 1x

Ingredients

Scale
  1. 4 medium jalapeños, tops removed, halved, and deseeded
  2. 1 tablespoon of olive oil
  3. 4 ounces of cream cheese, softened
  4. ½ teaspoon of garlic salt
  5. ¼ teaspoon of ground black pepper
  6. ½ teaspoon of onion powder
  7. 1 cup (113 g) of mild cheddar cheese, shredded (keep half for later use)
  8. 6 strips of crispy bacon, divided
  9. 4 slices of Texas toast (or your preferred bread)
  10. 4 tablespoons of unsalted butter, divided

Instructions

  1. Preparation: Begin by preheating your oven to 425°F (220°C). Take a baking sheet and line it with parchment paper for easy cleanup.
  2. Roasting Jalapeños: Lightly brush your jalapeños with olive oil, ensuring all sides are coated. Arrange them on the baking sheet. Roast in the preheated oven for about 15 minutes. You’re looking for the jalapeños to start charring slightly. Once done, remove them from the oven and let them cool down a bit.
  3. Cream Cheese Mixture: In a medium-sized mixing bowl, combine the cream cheese, garlic salt, black pepper, and onion powder. Stir until the mixture is smooth and creamy.
  4. Combine Jalapeños: When the jalapeños are cool enough to handle, chop them roughly. Fold these chopped jalapeños into the cream cheese mixture.
  5. Assemble the Sandwich: Butter one side of a slice of bread. Flip it over and spread a generous layer of the cream cheese mixture on the unbuttered side. Add half of your bacon strips and sprinkle ½ cup of shredded cheddar cheese on top. Cover with another slice of bread. Remember to butter the top slice! Repeat this process for the second sandwich.
  6. Cooking Time: Heat a skillet over medium heat. Place your sandwich in the skillet. Cook each side for about 3-5 minutes or until you see the bread turning golden brown and the cheese melting beautifully.
  7. Serve Hot: Your Jalapeño Popper Grilled Cheese Sandwich is ready! Serve it hot and enjoy the delightful combination of spicy jalapeños, creamy cheese, and crispy bacon in every bite.

Notes

Chef’s Tip: The key to a perfect grilled cheese sandwich is patience. Cook on medium heat to ensure your bread gets that perfect golden crust without burning, while also allowing the cheese to melt thoroughly.
