  • Total Time: 1 hour
  • Yield: 6 servings 1x

Ingredients

Scale

For the Crust

  • 2 cups crushed Oreo cookies – finely ground (about 24 cookies)
  • ¼ cup unsalted butter, melted

For the Chocolate Cheesecake

  • 2 packages (8 oz each) cream cheese, softened
  • ½ cup sour cream
  • ⅓ cup granulated sugar
  • 2 tbsp cocoa powder
  • 2 large eggs
  • ½ cup semi-sweet chocolate chips, melted
  • 1 tsp vanilla extract

For the Chocolate Whipped Cream

  • 1 cup heavy whipping cream
  • ¼ cup cocoa powder
  • ¼ cup powdered sugar

For the Topping

  • 18 oz jar of raspberry preserves (such as Smuckers)
  • 4 oz fresh raspberries for garnish

Instructions

Step 1: Prepare the Oreo Crust

  1. Preheat & Prep the Pan – Begin by lining the bottom of a 6-inch springform pan with parchment paper, then spray the sides with non-stick baking spray for easy release.
  2. Crush the Oreos – Use a food processor to pulse the Oreos until they resemble fine sand.
  3. Combine & Press – Mix the Oreo crumbs with melted butter until combined. Press this mixture firmly into the bottom of the springform pan to create an even crust.
  4. Freeze the Crust – Place the pan in the freezer while you prepare the cheesecake filling, helping the crust set and hold its shape during baking.

Step 2: Make the Chocolate Cheesecake Filling

  1. Beat the Cream Cheese Mixture – In a large mixing bowl, beat together the softened cream cheese, sugar, and sour cream until smooth and creamy. This step ensures your cheesecake has a silky texture.
  2. Incorporate Chocolate & Cocoa – Add in the cocoa powder, melted chocolate, and vanilla extract, beating until all ingredients are well combined and evenly colored.
  3. Add Eggs One at a Time – Crack in one egg, mix until incorporated, and then add the second egg, mixing until smooth.
  4. Pour & Prep for Baking – Pour the cheesecake mixture over the Oreo crust, smoothing the top with a spatula. Cover the top with foil to prevent excess moisture from entering the cheesecake.

Step 3: Cook in the Instant Pot

  1. Prepare the Instant Pot – Pour 1 cup of water into the bottom of the Instant Pot and place a trivet inside.
  2. Set for High Pressure – Place the covered springform pan onto the trivet, seal the lid, and set the Instant Pot to high pressure for 35 minutes.
  3. Natural Release – Once the timer goes off, allow the pressure to naturally release for 20 minutes.
  4. Remove & Cool – Carefully take the pan out, remove the foil, and let it cool on a wire rack before refrigerating it overnight to fully set.

Step 4: Make the Chocolate Whipped Cream

  1. Whip the Cream – In a mixing bowl, combine the heavy whipping cream, cocoa powder, and powdered sugar. Using a hand mixer, beat on medium speed until it starts to thicken.
  2. Increase to Stiff Peaks – Increase the speed and continue beating until stiff peaks form. Scoop the whipped cream into a piping bag for decorating.

Step 5: Add the Raspberry Topping & Garnish

  1. Spread Raspberry Preserves – Gently spread ¼ to ½ cup of raspberry preserves on top of the chilled cheesecake for a vibrant, fruity layer.
  2. Pipe Whipped Cream – Pipe dollops of chocolate whipped cream around the edges of the cheesecake.
  3. Finish with Fresh Raspberries – Top each dollop with a fresh raspberry for an elegant touch.

Notes

  • Room Temperature Ingredients – Ensure your cream cheese and eggs are at room temperature for a smooth batter that prevents lumps.
  • Cover Tightly – Covering the cheesecake with foil while cooking helps to prevent excess moisture from altering its texture.
  • Patience is Key – Allowing the cheesecake to chill overnight gives it time to set fully, creating a perfect, sliceable texture.
