  • Total Time: 50 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Chicken Wings:

  • 1 to 2 lbs. chicken wings (drummettes, mid-sections, or a mix)
  • White sesame seeds (for garnish)

For the Marinade:

  • 1 tablespoon soy sauce (use low-sodium if preferred)
  • 1/4 cup cooking sake or rice wine (can be substituted with chicken broth or apple juice for a non-alcoholic version)
  • 1/2 tablespoon sesame oil (adds a rich nutty flavor)
  • 1 scallion, cut into strips (for extra aroma)
  • 3 dashes black pepper powder (for mild heat)
  • 2-inch ginger, peeled and coarsely diced (for depth of flavor)

For the Honey Soy Glaze:

  • 3 tablespoons honey (for natural sweetness and caramelization)
  • 2 tablespoons soy sauce (balances the sweetness with a savory note)
  • 1 tablespoon mirin (optional, adds slight acidity)
  • 1 tablespoon cooking sake or rice wine (can be substituted with chicken broth)

Instructions

1. Prepare the Chicken Wings

  • Rinse the chicken wings thoroughly under cold running water. This helps remove any residual blood or bone fragments.
  • Pat them completely dry using paper towels. Removing excess moisture ensures crispier wings when baked.
  • Place the wings in a large mixing bowl and set aside.

2. Marinate the Chicken

  • In a small bowl, combine soy sauce, cooking sake (or rice wine), sesame oil, scallion strips, black pepper, and diced ginger.
  • Pour the marinade over the chicken wings and toss well to ensure each piece is evenly coated.
  • Cover the bowl and let the wings marinate for at least 30 minutes. If you have more time, marinating for up to 2 hours enhances the flavor further.
  • While the chicken is marinating, preheat your oven to 400°F (207°C).

3. Prepare the Honey Soy Glaze

  • In a small saucepan, combine honey, soy sauce, mirin, and cooking sake.
  • Heat over low heat, stirring continuously until the mixture thickens slightly (about 3 to 5 minutes).
  • Once thickened, remove from heat and set aside. The glaze should have a syrup-like consistency.

4. Bake the Chicken Wings

  • Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.
  • Arrange the marinated wings in a single layer on the baking sheet, leaving space between each piece.
  • Bake for 10 minutes in the preheated oven.

5. Apply the Glaze

  • After 10 minutes, remove the wings from the oven and brush them generously with the honey soy glaze.
  • Flip the wings and brush the other side as well.
  • Return the wings to the oven and bake for another 10 minutes.

6. Final Glazing and Caramelization

  • Remove the wings once more and apply another layer of glaze.
  • Bake for an additional 10 to 12 minutes, or until the wings develop a deep golden-brown color with slightly charred edges.
  • The glaze should be sticky and glossy, coating each wing perfectly.

7. Garnish and Serve

  • Remove the wings from the oven and immediately sprinkle with white sesame seeds.
  • Let them rest for a few minutes before serving to allow the flavors to settle.

Notes

  • Ensure Crispy Skin: Drying the wings thoroughly before marinating helps achieve a crispier texture when baked.
  • Don’t Skip the Marination: Even though 30 minutes is enough, longer marination deepens the flavor.
  • Use a Wire Rack: Placing the wings on a wire rack over a baking sheet allows air to circulate around them, leading to even crispiness.
  • Thickening the Glaze: If your glaze isn’t thickening, let it simmer for a few more minutes while stirring continuously. Avoid high heat to prevent burning.
  • Checking for Doneness: The wings should have an internal temperature of 165°F (74°C) when fully cooked.
