Ingredients

  • 2 zucchini
  • 46 boneless chicken thighs (sizes vary)
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 or 1/3 small onion
  • 1 tablespoon paprika
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon Knorr bouillon powder
  • 1 teaspoon Creole seasoning
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon black pepper

 

  • A few parsley leaves for garnish (optional)

Instructions

  • Combine Ingredients in a Bowl
    • Place the chopped zucchini, bell peppers, onion, and chicken in a large mixing bowl.
    • Drizzle the olive oil or avocado oil over the ingredients.
  • Season the Mixture
    • Sprinkle the paprika, onion powder, thyme, salt, black pepper, Creole seasoning, and bouillon powder over the bowl.
    • Use a spatula or clean hands to mix everything thoroughly, ensuring the seasonings evenly coat all the ingredients.
  • Prepare the Air Fryer
    • If your air fryer requires preheating, set it to 400°F. Many air fryers do not need preheating, but this step can help achieve better texture.
  • Cook in Batches
    • Place a single layer of the chicken and vegetable mixture into the air fryer basket. Avoid overcrowding to ensure even cooking.
    • Set the air fryer to 400°F and cook for 10 minutes.
  • Check for Doneness
    • At the 5-minute mark, open the air fryer and stir the contents to promote even cooking.
    • Use a meat thermometer to check that the chicken reaches an internal temperature of at least 165°F.
  • Adjust Cooking Time if Needed
    • If the chicken is not fully cooked, add an additional 2-3 minutes.
    • If the vegetables are browning too quickly, lower the temperature slightly.
  • Garnish and Serve
    • Transfer the cooked stir fry to a serving dish.
    • Garnish with freshly chopped parsley if desired.
