Ingredients
Main Ingredients
- 1 pound lean ground beef (or substitute with ground chicken for a lighter option)
- 4 large flour tortilla wraps (can use whole wheat tortillas for a healthier twist)
Sauces & Dairy
- 1 cup nacho cheese sauce (store-bought or homemade)
- 1/2 cup sour cream (can be replaced with Greek yogurt for extra protein)
Vegetables & Seasonings
- 1 can Rotel (green chilies with diced tomatoes)
- 1/2 cup chopped green peppers (red or yellow peppers can also be used)
- 1/2 cup diced onions (red, white, or yellow onions work well)
- 1 packet taco seasoning mix (store-bought or homemade with chili powder, cumin, garlic powder, and paprika)
Instructions
1. Cook the Meat
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until fully browned. This should take about 5 to 7 minutes.
- Drain any excess fat from the skillet to prevent the wrap from becoming greasy.
- Add the diced onions and green peppers to the skillet with the beef. Sauté for about 4 minutes, stirring occasionally, until the vegetables are softened.
- Sprinkle in the taco seasoning mix and stir well to coat the meat evenly. If the seasoning packet requires water, follow the package instructions and let it simmer for a couple of minutes.
2. Prepare the Nacho Cheese Mixture
- In a separate bowl, mix the Rotel (diced tomatoes with green chilies) and the nacho cheese sauce. Stir until fully combined. This mixture will add a rich, cheesy texture to the wrap.
3. Assemble the Wraps
- Lay out the four flour tortillas on a clean, flat surface.
- Spoon a generous layer of the nacho cheese mixture down the center of each tortilla.
- Evenly distribute the seasoned beef mixture over the cheese layer.
- Add a spoonful of sour cream to each wrap, spreading it slightly for even coverage.
- Sprinkle a handful of crushed Doritos over the meat mixture to add a satisfying crunch.
4. Fold and Roll
- Fold in the sides of each tortilla to prevent the filling from spilling out.
- Roll the wrap tightly, starting from the bottom, to form a burrito-like shape.
5. Toast the Wraps
- Heat a clean skillet or griddle over medium heat.
- Place the wraps seam-side down in the skillet and cook for 2-3 minutes, or until the bottom is golden brown and crispy.
- Flip and cook the other side for another 2-3 minutes until fully toasted.
- Remove from heat and let the wraps rest for a minute before serving.
Notes
Cooking Tips
- How to Tell if the Meat is Cooked – Ground beef should be fully browned with no pink spots. If using chicken, cook until it reaches an internal temperature of 165°F.
- Even Browning – Stir the meat frequently to ensure even cooking and to prevent burning.
- Crispier Wraps – Toasting the wraps in a dry skillet gives them a crispy exterior. For extra crunch, lightly brush them with a bit of oil before toasting.
Troubleshooting
- Wraps Falling Apart – Overfilling can make it hard to roll. Use a moderate amount of filling for a secure wrap.
- Soggy Wraps – If the wraps seem soggy, try draining excess moisture from the beef or reducing the amount of nacho cheese sauce.
- Burning Too Quickly – If the tortillas are browning too fast, lower the heat slightly and cook for a bit longer.
Storage and Reheating
- Refrigeration – Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheating – Reheat in a dry skillet over low heat for a crispy texture. Alternatively, use an air fryer at 350°F for 3-4 minutes.
