Instructions
Step 1: Roast the Tomatoes
Preheat your oven to 400ºF (200ºC). Begin by preparing the grape tomatoes for roasting. On a rimmed baking sheet, toss the tomatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them into a single layer on the baking sheet to ensure even roasting. Place them in the oven and roast for about 20 minutes, or until the tomatoes are blistered and slightly charred. The roasting process will enhance the tomatoes’ natural sweetness and bring out their deep, rich flavor, which will later infuse the sauce.
Step 2: Season and Cook the Chicken
