  • ¼ cup whole egg mayo (full fat or reduced fat)
  • ⅓ cup Greek yogurt or sour cream (full fat or reduced fat)
  • 2 tablespoons olive oil
  • 1 clove garlic, crushed or grated
  • 2 anchovy fillets, finely chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Water, as needed

For the Chicken:

  • 2 large boneless, skinless chicken breasts (2 pounds), cut in half horizontally to make 4 fillets
  • Salt and pepper, to taste
  • ½ cup flour
  • 2 large eggs
  • ½ cup panko breadcrumbs
  • ½ cup Italian breadcrumbs
  • ½ cup grated Parmesan cheese
  • Avocado or olive oil spray

For the Salad:

  • 4 hearts of Romaine, torn into pieces
  • ½ cup shaved Parmesan

Instructions

1. Make the Caesar Dressing

  • Combine all the dressing ingredients in a small bowl or blender. Mix or blend until smooth and well combined.
  • Taste and adjust seasoning with salt and pepper, adding water to thin if necessary.

2. Prep the Chicken

  • Place the chicken breasts on a cutting board, cover with plastic wrap, and pound evenly with a rolling pin or meat tenderizer.
  • Season both sides with salt and pepper.
  • Set up a breading station:
    • In a shallow bowl, place the flour.
    • In a second shallow bowl, beat the eggs.
    • In a third shallow bowl, combine panko breadcrumbs, Italian breadcrumbs, and grated Parmesan.
  • Dredge each chicken fillet in flour, then dip in egg, and coat with the breadcrumb mixture, pressing the breadcrumbs on gently.

3. Cook the Chicken

  • Preheat the air fryer to 390°F (200°C).
  • Place the breaded chicken fillets in the air fryer basket in a single layer, spraying with cooking oil.
  • Air fry for 12-13 minutes, flipping halfway through (at 7 minutes) and spraying again with oil. Continue cooking for 5-6 minutes, depending on chicken thickness. Cook in batches if needed.

4. Prepare the Salad

  • Toss the torn romaine lettuce with shaved Parmesan and half of the Caesar dressing. Add more dressing as desired.

5. Serve

  • Plate the Caesar salad, topping with the crispy chicken cutlets. Serve immediately and enjoy!
