- 6 ounces of stuffing mix (Stove Top Cornbread is a great choice, but you can use any flavor you prefer)
- 1 ½ cups of chicken stock or broth
- 2 tablespoons of butter
- 10.5 ounces of cream of mushroom soup
- 1 cup of milk
- 8 ounces of sour cream (Greek yogurt is a great substitute)
- 1 teaspoon of poultry seasoning
- 3 cups of shredded rotisserie chicken (this saves time and adds a rich, savory flavor)
- 2 cups of chopped broccoli florets (for a bit of green and extra nutrients)
- 1 ½ cups of shredded Colby/Jack cheese (or any cheese of your choice for that cheesy topping)
Instructions
- Preheat your oven to 375°F (190°C) and prepare your 9×13-inch baking dish by spraying it with cooking spray.
- Make the stuffing: Boil the chicken stock and butter together, then remove from heat and stir in the stuffing mix. Let it sit for 5 minutes.
- Mix the casserole base: In a large bowl, whisk together the cream of mushroom soup, milk, sour cream (or Greek yogurt), and poultry seasoning until smooth.
- Add the chicken, broccoli, and cheese: Stir the shredded rotisserie chicken, chopped broccoli, and cheese into the soup mixture.
- Assemble the casserole: Pour the chicken mixture into the prepared baking dish. Spread it evenly, then top with the stuffing mixture.
- Bake for 30 minutes, until the top is golden and bubbly.
Notes
- Chicken Substitutions: If you don’t have rotisserie chicken, you can cook and shred your own chicken breasts or thighs. Simply season them with a bit of salt, pepper, and olive oil, and bake them at 375°F for 25–30 minutes, or until they’re fully cooked.
- Broccoli Texture: Make sure to chop the broccoli into small florets so they cook evenly in the casserole. If you prefer softer broccoli, you can lightly steam it before adding it to the casserole mixture. However, if you like a bit of crunch, you can skip steaming and add the raw broccoli directly.
- Creamy Texture: The sour cream or Greek yogurt gives the casserole a creamy texture. If you don’t have these ingredients, you can substitute them with plain yogurt or even a bit of heavy cream for extra richness.
- Stuffing Texture: The stuffing should be moist but not soggy. If the stuffing seems too dry after it’s mixed with the broth, you can add a bit more chicken stock to help moisten it up. If it’s too wet, let it sit for a few extra minutes to absorb the liquid.
- Add Salt and Pepper to Taste: While the dish is flavorful on its own, don’t be afraid to adjust the seasoning. You can add salt, pepper, or even a pinch of garlic powder for extra flavor.
- Avoid Overcooking the Broccoli: Broccoli can quickly become mushy if overcooked. If you prefer firmer broccoli, be sure to check the casserole at the 25-minute mark to ensure that the broccoli has reached the perfect level of tenderness.
