Instructions
1. Prepare the Chicken
- Start by dicing the chicken breasts into small, 1/3-inch cubes. For easier slicing, partially freeze the chicken beforehand; this will help you achieve uniform pieces.
- Place the diced chicken into a large mixing bowl.
2. Combine the Fritter Mixture
- To the chicken, add the eggs, mayonnaise, flour (or your gluten-free substitute), shredded mozzarella, chopped dill, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight. This step helps the flavors meld together and makes the batter easier to handle.
3. Cook the Fritters
- Heat a large non-stick skillet over medium heat and add 2 tablespoons of oil.
- Once the oil is hot, scoop the chicken mixture into the pan using a heaping tablespoon. Slightly flatten each portion with the back of your spoon to create a patty shape.
- Cook the fritters uncovered for 3-4 minutes on one side until golden brown, then flip and cook for another 3 minutes. Ensure the chicken is fully cooked through (the interior should be white and no longer pink).
- Repeat the process with the remaining batter, adding more oil as needed.
4. Make the Garlic Aioli (Optional)
- In a small bowl, combine mayonnaise, pressed garlic, lemon juice, salt, and pepper. Stir until smooth and creamy.
5. Serve and Enjoy
