Instructions

1. Prepare the Chicken

  • Start by dicing the chicken breasts into small, 1/3-inch cubes. For easier slicing, partially freeze the chicken beforehand; this will help you achieve uniform pieces.
  • Place the diced chicken into a large mixing bowl.

2. Combine the Fritter Mixture

  • To the chicken, add the eggs, mayonnaise, flour (or your gluten-free substitute), shredded mozzarella, chopped dill, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight. This step helps the flavors meld together and makes the batter easier to handle.
