Instructions

  • Prepare the Pan
    • Preheat your oven to 350°F (175°C).
    • Spray a 9×5-inch loaf pan with floured cooking spray or grease and flour it.
    • Set aside. For a taller loaf, you can opt for an 8×4-inch pan, but baking times may vary.
  • Mix Wet Ingredients
    • In a large mixing bowl, combine the egg, brown sugar, coconut oil, granulated sugar, sour cream, vanilla extract, cinnamon, and nutmeg.
    • Whisk everything together until well blended.
  • Incorporate Dry Ingredients
    • Add the flour, baking powder, baking soda, and an optional pinch of salt to the bowl.
    • Gently fold the ingredients with a spatula or spoon until just combined. Avoid overmixing, as this can result in a dense loaf.
  • Add Carrots and Apples
    • Fold in the grated carrots and apples.
    • The batter will be thick—this is intentional, as it helps maintain the bread’s structure and moisture.
  • Transfer to the Pan
    • Pour the batter into the prepared pan and smooth the top lightly with a spatula.
  • Bake to Perfection
    • Bake for 45 to 52 minutes.
    • At the 35-minute mark, tent the pan with foil to prevent the top and sides from over-browning.
    • The bread is done when the top is golden, the center is set, and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Cool Before Slicing
    • Allow the bread to cool in the pan for about 15 minutes.
    • Transfer it to a wire rack to cool completely before slicing and serving.
