Ingredients
Scale
- 1 large egg
- ½ cup light brown sugar, packed
- ⅓ cup liquid-state coconut oil (or substitute with canola or vegetable oil)
- ¼ cup granulated sugar
- ¼ cup sour cream (lite is fine, or substitute with Greek yogurt)
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- ½ teaspoon ground nutmeg
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- Pinch of salt (optional and to taste)
- ¾ cup grated carrots (about 1 large peeled and trimmed carrot)
- ¾ cup grated apples (preferably unpeeled Fuji, Gala, or Honeycrisp)
Instructions
- Prepare the Pan
- Preheat your oven to 350°F (175°C).
- Spray a 9×5-inch loaf pan with floured cooking spray or grease and flour it.
- Set aside. For a taller loaf, you can opt for an 8×4-inch pan, but baking times may vary.
- Mix Wet Ingredients
- In a large mixing bowl, combine the egg, brown sugar, coconut oil, granulated sugar, sour cream, vanilla extract, cinnamon, and nutmeg.
- Whisk everything together until well blended.
- Incorporate Dry Ingredients
- Add the flour, baking powder, baking soda, and an optional pinch of salt to the bowl.
- Gently fold the ingredients with a spatula or spoon until just combined. Avoid overmixing, as this can result in a dense loaf.
- Add Carrots and Apples
- Fold in the grated carrots and apples.
- The batter will be thick—this is intentional, as it helps maintain the bread’s structure and moisture.
- Transfer to the Pan
- Pour the batter into the prepared pan and smooth the top lightly with a spatula.
- Bake to Perfection
- Bake for 45 to 52 minutes.
- At the 35-minute mark, tent the pan with foil to prevent the top and sides from over-browning.
- The bread is done when the top is golden, the center is set, and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool Before Slicing
- Allow the bread to cool in the pan for about 15 minutes.
- Transfer it to a wire rack to cool completely before slicing and serving.
Notes
- Choose the Right Apples
- Fuji, Gala, or Honeycrisp apples are ideal because of their sweetness and firmness.
- Avoid overly soft apples, which can release too much moisture.
- Grate, Don’t Chop
- Grated carrots and apples blend seamlessly into the batter, ensuring even distribution and a uniform texture.
- Monitor Moisture Levels
- The moisture content of the carrots and apples can vary.
- If your batter seems too wet, add a tablespoon of flour to adjust.
- Tent with Foil
- Cover the bread with foil during the final stages of baking to prevent over-browning while allowing the center to cook thoroughly.
