Ingredients
For the Chicken:

- 1/2 cup (64 g) cornstarch: Essential for achieving that light, crispy coating.
- Oil spray: Ensures even cooking and golden crispiness in the air fryer.
For the Marinade:
- 1 tablespoon vegetable oil: Keeps the chicken moist during cooking.
- 3 cloves garlic, finely grated: Infuses robust flavor.
- 1 tablespoon finely grated ginger: Adds warmth and depth.
- 1 teaspoon brown sugar (or regular sugar): Balances savory and spicy notes.
- 1/2 teaspoon salt: Enhances natural flavors.
For the Spice Mix:
- 2 teaspoons white pepper powder: A signature ingredient delivering earthy heat.
- 1 teaspoon salt: Complements the chicken’s natural flavor.
- 1/2 teaspoon brown sugar (or regular sugar): A touch of sweetness for balance.

Instructions
- Marinate the Chicken
- Combine chicken pieces with marinade ingredients in a bowl. Mix until evenly coated.
- Allow to marinate for at least 30 minutes at room temperature or overnight in the fridge for deeper flavor.
- Prepare the Spice Mix
- In a small bowl, combine white pepper powder, salt, sugar, and five-spice powder. Stir until well mixed. Set aside.
- Coat the Chicken
- Gradually add cornstarch to the marinated chicken, stirring to ensure each piece is evenly coated.
- Cook in the Air Fryer
- Arrange chicken pieces in a single layer in the air fryer basket, ensuring no overlap.
- Spray oil generously over the chicken to cover any dry cornstarch.
- Cook at 350°F (176°C) for 10 minutes. Flip the chicken, spray with oil again, and increase the temperature to 400°F (200°C). Cook for an additional 5 minutes or until golden brown.
- Season and Serve
- Transfer cooked chicken to a large bowl. Sprinkle half of the spice mix and toss gently. Taste and add more spice mix if needed.
- Garnish with basil, chili peppers, and lemon wedges as desired. Serve hot.
Notes

- Cornstarch Coating: Ensure an even, thin layer for optimal crispiness.
