  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Chicken:

  • 1 lb (454 g) boneless, skinless chicken thighs or breasts: Thighs are juicier, while breasts offer a leaner option.
  • 1/2 cup (64 g) cornstarch: Essential for achieving that light, crispy coating.
  • Oil spray: Ensures even cooking and golden crispiness in the air fryer.

For the Marinade:

  • 1 tablespoon vegetable oil: Keeps the chicken moist during cooking.
  • 3 cloves garlic, finely grated: Infuses robust flavor.
  • 1 tablespoon finely grated ginger: Adds warmth and depth.
  • 1 teaspoon brown sugar (or regular sugar): Balances savory and spicy notes.
  • 1/2 teaspoon salt: Enhances natural flavors.

For the Spice Mix:

  • 2 teaspoons white pepper powder: A signature ingredient delivering earthy heat.
  • 1 teaspoon salt: Complements the chicken’s natural flavor.
  • 1/2 teaspoon brown sugar (or regular sugar): A touch of sweetness for balance.
  • 1/8 teaspoon five-spice powder: Adds a complex, aromatic profile.

Optional Garnishes:

  • Basil (fresh or fried) or nori sheets: Traditional and modern twists for added flavor and texture.
  • Lemon wedges: Brightens the dish with a citrusy zing.
  • Sliced hot peppers: Provides extra heat and visual appeal.

Instructions

  1. Marinate the Chicken
    • Combine chicken pieces with marinade ingredients in a bowl. Mix until evenly coated.
    • Allow to marinate for at least 30 minutes at room temperature or overnight in the fridge for deeper flavor.
  2. Prepare the Spice Mix
    • In a small bowl, combine white pepper powder, salt, sugar, and five-spice powder. Stir until well mixed. Set aside.
  3. Coat the Chicken
    • Gradually add cornstarch to the marinated chicken, stirring to ensure each piece is evenly coated.
  4. Cook in the Air Fryer
    • Arrange chicken pieces in a single layer in the air fryer basket, ensuring no overlap.
    • Spray oil generously over the chicken to cover any dry cornstarch.
    • Cook at 350°F (176°C) for 10 minutes. Flip the chicken, spray with oil again, and increase the temperature to 400°F (200°C). Cook for an additional 5 minutes or until golden brown.
  5. Season and Serve
    • Transfer cooked chicken to a large bowl. Sprinkle half of the spice mix and toss gently. Taste and add more spice mix if needed.
    • Garnish with basil, chili peppers, and lemon wedges as desired. Serve hot.

Notes

  1. Choose the Right Chicken: Thighs provide a richer flavor, while breasts are leaner.
  2. Cornstarch Coating: Ensure an even, thin layer for optimal crispiness.
  3. Oil Spraying: A thorough spray prevents dry patches and promotes even browning.
  4. Batch Cooking: Avoid overcrowding in the air fryer to ensure uniform cooking.
