- 1/2 cup unsalted butter, softened
- 1/4 cup cream cheese, softened
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 2 1/4 cups flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 2 1/2 cups chocolate chips
Instructions
- Prepare a baking sheet by lining it with parchment paper and set it aside.
- In a stand mixer’s bowl, cream together the butter, cream cheese, brown sugar, white sugar, egg, and vanilla extract for about 4-5 minutes until the mixture is light and fluffy.
- Gradually add in the flour, cornstarch, and baking soda to the creamed mixture, beating just until everything is well incorporated.
- Gently fold in the chocolate chips. Using a cookie scoop, drop dough balls onto the prepared baking sheet. Cover the dough loosely with cling film and refrigerate for at least 2 hours to firm up.
- When you’re ready to bake, preheat your oven to 350°F (175°C). Place the chilled dough balls onto the baking sheet, ensuring they’re spaced apart.
- Bake in the preheated oven for 8-9 minutes, or until the cookies are just set and lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
