  • Total Time: 22 minutes
  • Yield: 4 servings

Ingredients

  • Chicken Thighs (6 boneless, skinless): The star of the dish, chicken thighs are known for their rich flavor and juiciness, making them ideal for skillet cooking.
  • Kosher Salt (1 teaspoon): Enhances the natural flavors of the chicken.
  • Black Pepper (1/2 teaspoon): Adds a hint of heat and depth to the seasoning.
  • Paprika (1/2 teaspoon): Contributes a subtle smoky sweetness that balances the dish.
  • Vegetable Oil (2 tablespoons): Helps achieve a perfect sear on the chicken, ensuring a golden-brown exterior.
  • Bang Bang Sauce (1 cup): You can make your own or use a store-bought version for convenience. The sauce typically combines mayonnaise, sweet chili sauce, and a touch of sriracha for a creamy, sweet, and slightly spicy kick.
  • Green Onions (chopped, for garnish): Adds a pop of color and a mild onion flavor that complements the chicken.

Instructions

1. Season the Chicken

In a small bowl, mix together 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of paprika. Apply this seasoning evenly to the chicken thighs to infuse them with flavor from the start.

2. Sear the Chicken

Place a large nonstick skillet over medium heat and add 2 tablespoons of vegetable oil. Once the oil is hot and shimmering, carefully place the seasoned chicken thighs into the skillet. Depending on the size of your skillet, you may need to cook the chicken in batches to avoid overcrowding.

Cook the chicken for approximately 5 minutes without moving it to ensure a nice sear. Flip the thighs and reduce the heat to medium-low. Continue to cook for another 5 minutes or until the chicken reaches an internal temperature of 165°F. Adjust cooking time as necessary based on the thickness of the thighs.

3. Rest the Chicken

Once the chicken is cooked through, transfer it to a plate and tent with foil to keep it warm. This allows the juices to redistribute, ensuring every bite is juicy and tender.

4. Prepare the Sauce

In the same skillet, pour in 1 cup of Bang Bang sauce. Stir the sauce while scraping up the brown bits from the bottom of the pan to enhance the flavor. Let the sauce simmer for 1-2 minutes until it’s heated through and slightly thickened.

5. Combine and Serve

Return the chicken thighs to the skillet, turning them to coat evenly in the sauce. Allow the chicken to sit in the sauce for about a minute to absorb some of its flavors.

Garnish with freshly chopped green onions for a burst of color and serve hot. This dish pairs wonderfully with steamed rice, noodles, or a simple side salad.

Notes

  • Chicken Alternatives: If you don’t have chicken thighs, boneless, skinless chicken breasts can work as well. Be mindful to adjust the cooking time as they may cook faster.
  • Oil Choices: Substitute vegetable oil with avocado oil or canola oil for a similar high-heat cooking option.
  • Homemade Bang Bang Sauce: For a simple homemade version, combine 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, and 1-2 teaspoons sriracha (adjust to taste).
  • Spice Level: For those who love extra heat, sprinkle in some red pepper flakes or add more sriracha to the sauce.
  • Garnish Options: Swap green onions with cilantro for a different flavor profile.
