Ingredients
Scale
- 3 lbs baby red potatoes, quartered
- 1/4 cup olive oil
- 6 cloves garlic, minced
- 3/4 cup freshly grated parmesan cheese
- 1 tbsp Italian seasoning
- 1/2 cup unsalted butter, melted
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven
- Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet with olive oil or non-stick spray to prevent sticking.
- Parboil the Potatoes
- Bring a large pot of water to a boil. Add the quartered baby potatoes and parboil for 5-8 minutes until slightly tender but not fully cooked. Drain the potatoes and allow them to cool slightly.
- Prepare the Seasoning Mixture
- In a large mixing bowl, combine olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, and black pepper. Stir until evenly mixed.
- Coat the Potatoes
- Add the parboiled potatoes to the seasoning mixture and toss until all pieces are well-coated. Ensure the garlic and parmesan adhere to the potatoes for maximum flavor.
- Arrange on the Baking Sheet
- Place the seasoned potatoes cut-side down in a single layer on the prepared baking sheet. This helps achieve a crispy crust.
- Roast the Potatoes
- Roast in the preheated oven for 25-30 minutes, flipping halfway through for even browning. For extra crispiness, broil for an additional 3-5 minutes at the end.
- Make the Butter Drizzle
- While the potatoes are roasting, melt the butter in a small saucepan or microwave. Stir in chopped parsley.
- Finish and Serve
- Drizzle the parsley-infused butter over the hot potatoes straight out of the oven. Garnish with more parmesan and parsley if desired. Serve immediately to enjoy the best texture and flavor.
Notes
- Achieving Even Crispiness: Spread potatoes in a single layer with space between pieces to avoid steaming.
- Parboiling Shortcut: If short on time, skip the parboiling step and roast for 40-50 minutes instead.
- Fresh Parmesan: Use freshly grated parmesan for deeper flavor and a lightly crunchy texture. Pre-shredded varieties may not melt as well.
- Add Extra Herbs: Experiment with rosemary or thyme for additional aroma and flavor.
