Ingredients:

  • 1 lb. lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 can (10-3/4 oz.) condensed cream of mushroom soup, undiluted (or homemade substitute as mentioned)
  • 4 oz. mushrooms, chopped
  • 1 cup (8 oz.) sour cream
  • Hot cooked wide egg noodles
  • Chopped parsley, for garnish (optional)

Directions:

  1. Cook beef, onion, and garlic over medium heat until meat is no longer pink; drain.
  2. Stir in the condensed cream of mushroom soup and simmer uncovered for about 10 minutes.
  3. Stir in sour cream and cook until the mixture is hot. Ensure not to bring it to a boil.
  4. Serve the stroganoff over cooked noodles and garnish with parsley if desired.

For the homemade condensed soup substitute:

  1. Melt 2 tbsp. butter in a saucepan.
  2. Stir in 3 tbsp. flour until the mixture is smooth and bubbly.
  3. While continuously stirring, add 1/2 cup chicken broth and 1/2 cup milk.
  4. Bring the mixture to a low boil, continuing to stir until it thickens.
  5. Season with salt and pepper to taste. This can be used in place of the canned cream of mushroom soup.
