Ingredients
For the Gumdrops:
- 1 cup fruit juice (choose your favorite: orange, grape, or cranberry)
- 1 tablespoon lemon juice (for a tangy touch)
- 2 tablespoons gelatin powder (unflavored)
- 1 cup granulated sugar (plus extra for coating)
- 1/2 cup water
Optional for Dusting:
- Cornstarch (to prevent sticking)
Instructions
1. Prepare the Base Mixture
- In a small saucepan, combine the fruit juice, lemon juice, and water.
- Warm the mixture over medium heat, but do not allow it to boil, as high heat can affect the gelatin’s setting properties.
2. Dissolve the Gelatin
- Sprinkle the gelatin powder over the warm juice mixture.
- Whisk continuously until the gelatin is fully dissolved and the liquid is smooth. This step ensures the gumdrops will have their signature firm yet chewy texture.
3. Sweeten the Mixture
- Gradually stir in the granulated sugar. Continue heating and stirring until the sugar has completely dissolved, creating a uniform and glossy liquid.
4. Cool Slightly and Mold
- Remove the saucepan from heat and let the mixture cool slightly—this helps prevent air bubbles when transferring to molds.
- Pour the mixture into silicone molds for fun shapes or into a lightly greased baking dish if you prefer to cut gumdrops into cubes later.
5. Set the Gumdrops
- Allow the gumdrops to set at room temperature for several hours or place them in the refrigerator to speed up the process. They should be firm yet pliable when ready.
6. Unmold and Shape
- Carefully remove the gumdrops from the molds. If using a baking dish, cut the set mixture into small cubes with a sharp knife.
7. Coat the Gumdrops
- Roll each gumdrop in granulated sugar for a sweet and sparkly finish. For extra insurance against sticking, dust them lightly with cornstarch as well.
8. Store and Serve
- Place the gumdrops in an airtight container. They’ll stay fresh at room temperature for up to two weeks—though they rarely last that long!
Notes
- Choose Quality Juice:
- Use pure fruit juice for the best flavor. Avoid juices with added sugar or artificial flavors, as they may alter the taste and texture.
- Perfect Molding:
- Silicone molds make unmolding easier and allow for creative shapes like stars, hearts, or holiday-themed designs.
- Prevent Sticking:
- A light dusting of cornstarch before rolling in sugar can keep the gumdrops from sticking together.
- Customize Flavors:
- Mix and match juices to create unique flavor combinations, like orange-pineapple or cranberry-lime.
- Adjust Sweetness:
- If you prefer a less sweet treat, reduce the sugar slightly or use naturally sweet juices like apple or mango.
