Ingredients
Crust and Topping:
- 1 ½ cups all-purpose flour

Filling:
- 2 large eggs
- 1 cup granulated sugar
- ½ cup sour cream
- ⅓ cup all-purpose flour
- Pinch of salt
- 3 cups fresh strawberries, diced
Instructions
Step 1: Prepare the Baking Dish
- Preheat your oven to 350°F (175°C).
- Lightly grease a 7×11-inch (2-quart) glass baking dish or line it with parchment paper. This helps with easy removal and cleanup.
Step 2: Make the Crust and Topping
- In a large mixing bowl, whisk together the flour, sugar, and salt.
- Add the chilled, cubed butter and use a pastry cutter or fork to mix until the texture is crumbly. If you don’t have a pastry cutter, you can use your hands, rubbing the butter into the flour mixture until it resembles coarse crumbs.
- Reserve ¾ cup of the mixture for the topping.
- Press the remaining crust mixture evenly into the bottom of the prepared baking dish.
- Bake for 15 minutes, then remove from the oven and let it cool slightly while you make the filling.
Step 3: Prepare the Filling
- In a large mixing bowl, whisk together the eggs, sugar, sour cream, flour, and salt until smooth.
- Gently fold in the diced strawberries, ensuring they’re evenly distributed throughout the mixture.
Step 4: Assemble and Bake
- Pour the filling evenly over the pre-baked crust.
- Sprinkle the reserved ¾ cup of crust mixture evenly over the top.
- Bake for 45-55 minutes, or until the top is golden brown and the filling is set.
Step 5: Cool and Serve
- Let the bars cool for at least 1 hour before cutting. This helps the filling firm up, making slicing easier.
- Cut into squares and serve at room temperature.

1. How to Tell If the Bars Are Fully Baked
- The top should be golden brown.
- The filling should not jiggle excessively when you move the pan.
- Insert a toothpick near the center—if it comes out with just a few moist crumbs, the bars are done.
2. Preventing a Soggy Crust
- Always pre-bake the crust for 15 minutes to prevent sogginess.
- If using frozen strawberries, thaw and drain them before adding to the filling.
3. Cutting Perfect Slices
- Allow the bars to cool completely before cutting.
