Ingredients

  • 8 oz cream cheese, softened (light cream cheese is okay)
  • 3 to 4 green onions, thinly sliced
  • 2 jalapeños, seeded and diced (use less or more depending on preference)
  • 8 slices beef or chicken bacon, cooked and crumbled
  • 8 oz pepper jack cheese, shredded
  • 4 oz sharp cheddar cheese, shredded
  • 48 tortilla scoop chips

Instructions

1. Preheat the Oven

Set your oven to 350°F (175°C). Line two large baking sheets with parchment paper for easy cleanup and even baking.

2. Prepare the Filling

In a medium mixing bowl, combine the softened cream cheese, green onions, diced jalapeños, crumbled beef or chicken bacon, shredded pepper jack cheese, and shredded sharp cheddar cheese. Stir until all the ingredients are evenly mixed.

3. Fill the Tortilla Scoops

Place the tortilla scoop chips on the prepared baking sheets in a single layer. Using a teaspoon, scoop a rounded portion of the filling into each chip. Be careful not to overfill, as too much cheese mixture may spill over while baking.

4. Add Toppings (Optional)

For extra flavor, sprinkle additional shredded cheese and a bit of crumbled bacon on top of each bite before baking.

5. Bake the Bites

Place the baking sheets in the oven and bake for 8 to 10 minutes, or until the cheese is melted and bubbly. Be sure to watch closely in the last few minutes to prevent over-browning.

6. Serve Immediately

Remove from the oven and let the bites cool for a minute before serving. These appetizers taste best when enjoyed warm.
