  • 4 cups plain flour (all-purpose flour or ‘00’ pizza/pasta flour)
  • 20 grams dried yeast (approximately 4 teaspoons)
  • 2 teaspoons caster sugar
  • 2 teaspoons salt (regular table salt)
  • 1 ½ cups warm water (warm to the touch, not hot)
  • 8 tablespoons olive oil

For the Toppings

  • 68 tablespoons pizza sauce (homemade or store-bought)
  • 2 cups shredded pizza cheese (mozzarella or a pizza blend)

Choose 2-4 of the Following Toppings

  • 100 grams cooked chicken breast, diced (as a substitute for bacon)
  • 100 grams beef salami, thinly sliced
  • 1 small capsicum (bell pepper), diced
  • ½ cup mushrooms, sliced
  • Fresh basil leaves

Instructions

1. Prepare the Dough

  1. Preheat your oven to 200°C (392°F) or your air fryer to 180°C (356°F). Line a baking tray with parchment paper (no paper is required for an air fryer).
  2. In a large mixing bowl, combine the flour, yeast, and sugar. Stir until well mixed, then add the salt.
  3. Pour in the warm water and olive oil. Stir with a spoon or use your hands to mix until the dough starts to come together.
  4. Transfer the dough onto a floured surface and knead for about 2-3 minutes until it becomes smooth and elastic.
  5. Place the dough into a lightly greased bowl, cover it with plastic wrap or a clean kitchen towel, and let it rise in a warm place for at least 30 minutes (1-2 hours is even better). The dough should double in size.

2. Roll and Fill the Dough

  1. Once the dough has risen, place it onto a floured surface and knead for another 5 minutes. The dough should be soft but not sticky. If it sticks to your hands, add a little more flour.
  2. Using a rolling pin, roll the dough into a large rectangle, about 1 centimeter in thickness. If you prefer smaller scrolls, divide the dough into two portions and roll them separately.
  3. Spread an even layer of pizza sauce over the dough, making sure to cover the edges.
  4. Sprinkle the shredded cheese over the sauce.
  5. Add your choice of toppings, such as diced chicken, beef salami, capsicum, mushrooms, or basil leaves. Spread them evenly to ensure every bite is flavorful.

3. Roll and Cut the Scrolls

  1. Starting from one of the long edges, roll the dough tightly into a log. Make sure it is firm but not too tight to avoid squeezing out the filling.
  2. Pinch the end of the roll to seal it so it doesn’t unravel while baking.
  3. Using a sharp knife, cut the roll into 16 even pieces (or 20-24 for smaller scrolls).
  4. Place the scrolls on the prepared baking tray or in the air fryer basket, leaving a small gap between each one as they will expand during baking.

Cooking Instructions

Oven Method

  1. Bake the scrolls for 15-20 minutes (or 12-15 minutes for smaller ones) until they are golden brown on the outside and soft on the inside.
  2. Check for doneness by cutting one in half—it should have a fluffy center with no raw dough.
  3. Transfer the scrolls to a wire rack and allow them to cool slightly before serving.

Air Fryer Method

  1. Cook the scrolls in the air fryer for 10-12 minutes for large ones or 8-10 minutes for smaller ones.
  2. Depending on the size of your air fryer, you may need to cook them in batches to allow air circulation for even cooking.
  3. Once done, transfer to a wire rack to cool slightly before serving.

How to Tell if the Dough is Ready

  • If you press the dough lightly and it springs back, it has been kneaded enough.
