  • Fresh Cheese (¾ cup, well-drained) – Adds a slightly tangy and light texture to the filling. If fresh cheese isn’t available, you can use additional cream cheese or ricotta cheese.
  • Egg (1 large) – Helps bind the filling together, creating a smooth consistency.
  • Sugar (⅓ to ½ cup) – Sweetens the cheesecake mixture. Adjust based on your sweetness preference.
  • Vanilla Extract (1 tsp) – Enhances the flavor with a warm, aromatic note. If you prefer, almond extract can add a slightly nutty taste.
  • Apricot Jam (as needed) – Provides a fruity contrast to the creamy filling. Other thick jams, such as peach, raspberry, or strawberry, work well as substitutes.

For the Egg Wash & Topping

  • Egg (1 large) & Water (1 tbsp) – Creates a glossy, golden-brown finish when brushed onto the pastries.
  • Sugar (¼ – ⅓ cup) – Sprinkled on the edges for a slightly caramelized crunch.

Instructions

1. Prepare the Cheesecake Filling

  • In a mixing bowl, combine ½ packet of cream cheese and ⅓ to ½ cup sugar. Mix until smooth and creamy.
  • Add ¾ cup fresh cheese, 1 egg, and 1 teaspoon vanilla extract. Stir until fully incorporated. The mixture should be smooth, thick, and well combined.

2. Prepare the Puff Pastry

  • If using frozen puff pastry, thaw it in the refrigerator for a few hours before use. This prevents it from becoming too soft and sticky.
  • Roll out the pastry and cut it into 3 x 3-inch squares using a sharp knife or pizza cutter.
  • Place the pastry squares on a parchment-lined baking sheet, ensuring they have space to expand during baking.

3. Assemble the Pastries

  • Spoon 1 full tablespoon of the cheesecake filling into the center of each square.
  • Add 1 teaspoon of apricot jam on top of the filling.
  • Place the assembled pastries in the freezer for 1 to 2 hours. This step ensures that the filling remains firm while baking and prevents the jam from spreading too much.

4. Preheat the Oven

  • Set your oven to 400°F (200°C) while the pastries are freezing. A hot oven helps puff pastry rise properly.

5. Apply the Egg Wash & Sugar Topping

  • In a small bowl, whisk together 1 egg and 1 tablespoon of water to create an egg wash.
  • Brush the edges of each pastry square with the egg wash.
  • Sprinkle about 1 teaspoon of sugar around the edges for added crunch.

6. Bake the Pastries

  • Arrange the pastries 1 inch apart on a parchment-lined baking sheet.
  • Bake for 15+ minutes, or until the tops and bottoms turn golden brown.
  • If the tops brown too quickly while the bottoms remain undercooked, move the tray to the lower rack and cover the tops with foil. Continue baking until the bottoms are fully done.

7. Cool & Serve

  • Let the pastries cool slightly before serving. They taste best when warm, with a crispy outer layer and creamy filling inside.

  • Why freeze the pastries before baking?
