  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil
  • ½ teaspoon chili flakes (optional for spice)
  • 2 tablespoons lime juice
  • Salt and pepper to taste

  • Fresh cilantro for garnish

Instructions

  • Marinate the Chicken
In a mixing bowl, combine brown sugar, soy sauce, minced garlic, grated ginger, lime juice, and olive oil. Stir well to dissolve the sugar and blend the flavors. Place the chicken breasts or thighs in the marinade, ensuring each piece is fully coated. Cover and let it sit in the refrigerator for at least 30 minutes. For a deeper flavor, marinate for up to two hours.
  • Choose a Cooking Method
    • Grilling: Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-8 minutes per side, basting occasionally with the leftover marinade. Add pineapple slices to the grill for a smoky, caramelized flavor.
    • Baking: Preheat the oven to 375°F (190°C). Place the chicken in a baking dish and pour the marinade and pineapple chunks over it. Bake for 30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
    • Slow Cooking: Place the chicken and pineapple in a slow cooker, then pour the marinade over it. Cook on low for 4-5 hours until the chicken is tender and infused with flavor.
  • Check for Doneness
If using a meat thermometer, ensure the thickest part of the chicken reaches 165°F (75°C). If a thermometer is not available, cut into the thickest piece—there should be no pink in the center, and the juices should run clear.
  • Serve and Garnish
Transfer the cooked chicken to a plate and spoon extra sauce over the top. Garnish with freshly chopped cilantro for a burst of freshness.

Notes

  • Marination is Essential
Allowing the chicken to marinate enhances its flavor. While 30 minutes is enough, letting it sit for longer deepens the taste. If marinating overnight, store it in an airtight container in the refrigerator.
  • Balancing Sweetness
Pineapple and brown sugar naturally add sweetness, but if the dish tastes too sweet, adding a splash of lime juice or extra soy sauce can balance the flavors.
  • Preventing Overcooking
Overcooked chicken can become dry and tough. Using a thermometer is the most reliable way to check doneness. If grilling, avoid pressing down on the chicken, as it releases juices that keep it moist.
  • Substituting Proteins
If chicken is not preferred, this recipe can be adapted using beef strips or tofu. When using beef, reduce cooking time slightly to maintain tenderness. If using tofu, press out excess moisture before marinating to help it absorb the flavors.
  • Enhancing the Sauce For a thicker sauce, mix 1 teaspoon of cornstarch with 2 tablespoons of water and stir it into the sauce during the last few minutes of cooking. This will create a richer glaze that coats the chicken beautifully.
