- 2 slices of bread (use any bread you prefer, such as whole wheat, sourdough, or gluten-free)
- 1 ounce cream cheese (softened)
- 1/4 cup blueberries (fresh or frozen)
- 1 large egg
- 2 tablespoons heavy cream (or substitute with whole milk)
- A pinch of salt
- A pinch of cinnamon
- 1/2 teaspoon vanilla extract
- 1 tablespoon butter (for cooking)
Instructions
Step 1: Prepare the Filling
Soften the cream cheese to make it easier to spread. You can do this by leaving it at room temperature for about 10 minutes or microwaving it for a few seconds. If using a microwave, be sure to remove any foil packaging.
Once softened, spread a generous layer of cream cheese on one side of each slice of bread. If you prefer a slightly sweeter filling, mix in a tablespoon of sugar or honey before spreading.
Step 2: Prepare the Blueberries
Whether using fresh or frozen blueberries, warming them slightly will help release their natural juices and intensify the flavor. Microwave fresh blueberries for about 15 seconds and frozen ones for 30 seconds or more until they start to soften.
Spread a layer of warm blueberries over one slice of bread, then place the second slice on top to create a sandwich. Press down lightly to help the filling stay in place.
Step 3: Make the Egg Mixture
In a shallow dish, whisk together the egg, heavy cream (or milk), salt, cinnamon, and vanilla extract. The mixture should be smooth and well-combined.
Step 4: Soak the Bread
Dip the sandwich into the egg mixture, ensuring both sides absorb the liquid evenly. Let it sit for a few seconds on each side until the bread has soaked up most of the mixture without becoming too soggy.
Step 5: Cook the French Toast
Heat a skillet or frying pan over medium heat and melt the butter. Once the butter is hot and slightly bubbling, place the stuffed bread in the pan. Cook until golden brown on one side, about 3-4 minutes, then carefully flip and cook the other side for another 3-4 minutes.
Step 6: Serve and Garnish
Transfer the French toast to a plate and garnish with your favorite toppings. Sprinkle powdered sugar over the top, add extra fresh blueberries, and drizzle with maple syrup or honey. For added richness, serve with a dollop of whipped cream or Greek yogurt.
Notes
- Bread Falling Apart: If your bread is too soft, it may become too soggy and fall apart. Use thicker slices or slightly stale bread for better structure.
- Filling Leaking Out: Be careful not to overfill with blueberries, as they may spill out during cooking. Press the sandwich together lightly before dipping it into the egg mixture.
- Uneven Cooking: Cooking over high heat can cause the outside to brown too quickly while leaving the inside undercooked. Keep the heat at medium to allow even cooking.
- Eggy Taste: If you find the French toast too eggy, increase the amount of cream or milk in the batter to balance the flavor.
